I then went and cleaned my grandma's office building with her but as I passed a thrift shop, I saw a sectional church. I got to my grandma's office building and told her about it. She sent me up there to get it and oh my goodness I love it! Couches go fast at this thrift store so I was praying the whole way there that no one had bought it yet and NO ONE DID! I was so excited so they put it in the truck, delivered it to my house and hauled off our old broken couch. If yall know me, yall know how much I've been DYING for a sectional lately lol! Got all of that done and finally went and cleaned the office building.
Grayson ate some of Daddy's and Adam's lasagna and while we waited for our dinner to cook, we went to my grandma's house to visit with my sister and niece. Grayson loves his cousin Elizabeth! Got back home and Grayson's been passed our ever since. He's so tired but now he probably won't sleep for me tonight. We're slowly trying to get into a sleep schedule. It's been horrible and I've tried literally EVERYTHING! We bought a book suggested by Grayson's developmental pediatrician so I'm praying once that comes in that it'll help some. Something's GOTTA give especially since Grayson will be starting preschool in August. Pheww!
We're sitting here watching Captain America: The Winter Soldier as we speak. Well let me rephrase that: TC AND ADAM are watching it, I'm too busy blogging lol

Recipe for Crock-Pot Lasagna:
Ingredients:
- 1 pound ground beef
- Box of lasagna noodles (you will have a lot leftover)
- 1 Jar of pasta sauce
- 3 oz. shredded mozzarella cheese
1 1/2 cups shredded parmesan cheese
- 16 oz. container of ricotta cheese
Directions:
- Spray crock-pot with cooking spray
- Brown ground beef in large skillet and drain well
- Add pasta sauce to meat and mix well
- Spread 1/4 of the meat/sauce on bottom of your crock-pot
- Arrange lasagna noodles over meat/pasta sauce (you may have to break the lasagna noodles so they fit in the crock-pot. Try to cover the meat/pasta sauce as much as you can with the lasagna noodles
- In a separate bowl, combine mozzarella cheese, parmesan cheese and ricotta cheese and mix well
- Spoon 1/3 of the cheese over noodles covering the noodles
- Repeat layers twice (I only did a total of 2 layers since I have a medium sized crock-pot)
- Top with remaining meat/pasta sauce
- Cover and cook on low for 4 hours
Recipe for Spanakopita:
Ingredients:
- 1 bag frozen spinach
- 10 sheets of fillo dough (found in the frozen food section of your grocery store)
- 1 onion (chopped)
- 3 cloves garlic (minced) (I left this out just because I'm not a big garlic fan)
- 3 tablespoons canola oil
- 1 egg (beaten)
- 1/2 cup feta cheese
- 1 1/2 cups ricotta cheese
- 2-3 tablespoons butter (melted)
- Salt and pepper for taste
Directions:
- Thaw fillo dough overnight in fridge with package closed
- Prepare ingredients before opening fillo dough
- Heat oil in pan over medium heat
- Add onions and saute for about 7 minutes
- Add garlic and saute for about 1 minute
- Increase heat to medium-high heat
- Add spinach and cook uncovered until wilted stirring occasionally
- Drain spinach
- Mix spinach/onion/garlic mixture, feta cheese, ricotta cheese, beaten egg, salt and pepper in a large bowl
- Preheat oven to 350 degrees
- Spray baking dish
- Gently place 1 piece of fillo dough in baking dish
- Brush with melted butter
- Repeat until you have a total of 5 layers
- Spread spinach mixture over layers
- Use remaining 5 sheets of fillo dough on top, buttering each sheet lightly with melted butter
- Use a sharp knife and cut all the way through to the bottom
- Sprinkle a little water evenly over the top with your hands
- Bake for 30-40 minutes or until the top layer of fillo dough is golden
* I'm BAD about not following every single step when it comes to recipes and that's ok. I like to make it my own and I'm a bit of a impatient rebel lol SO on that note, I didn't spread each sheet of fillo dough down and spread melted butter on each piece. I simply put 5 sheets on the bottom, spread melted butter on the top layer and did the same for the top layer of fillo dough. It all soaked pretty well and I didn't want mine that greasy because trust me, doing each layer like that, it gets VERY greasy and I'm just not a big fan of that lol but hey, to each their own! That and like I said up in the ingredients, I didn't add garlic. Not a big fan of that either. Not only is it stronger than onions when you mince it, but it just leaves the nastiest after taste with things like this. Bleh!
