Ok, I made this cake for Grayson for his 1st birthday last year (oh my goodness I can't believe I'm saying LAST year! ahhh!) ANYWAY! Grayson is allergic to SO many things! We found out he was allergic to dairy when he was just 1 month old. He was a breastfed all the way up until he was 18 months old when he weaned himself. When we found out he was allergic to dairy, one of the other pediatricians in the office was the one who tested him for it. When she found out I breastfed him, she immediately told me to quit because "it would be too hard and time consuming for me to cut dairy out of my diet for him." Oh, I proved her wrong. I was never a dairy person. I couldn't eat much without getting sick...until I got pregnant and that's literally all I craved along with fruit and vegetables. That's what gave Grayson such a bad case of being allergic to not only dairy, but soy as well. I cut out dairy out of my diet in order to continue breastfeeding him. And I'm not talking about just cheese, milk, ice cream...no I had to literally check every label with anything I ate or drank. Let's just say restaurants LOVED me lol. I couldn't have anything that said dairy, soy, traces of dairy or soy, casein, or whey. It was a long, hard journey to say the least, but I did it for Grayson. Kids usually outgrow it, but Grayson hasn't already. He can have dairy now like cookies, cake, milk, things with cheese in it, etc., but he can't overload or he'll get explosive diapers. He used to get TERRIBLE stomach aches when he was a baby but doesn't anymore. It just runs through him and he's good now lol.
Of course this cake, oh my goodness is it hypoallergenic lol. Grayson can't have nuts until he's 2 not because he's allergic to them but because it's a choking hazard. So I put no nuts or anything in it that touched nuts. When found out Grayson was allergic to eggs too so we have to substitute big time for this recipe. Along with eggs, dairy and soy, Grayson has issues with red dyes and mint. Long story short, we got him tested for this allergic reactions and everything was negative. His allergist said it was negative because Grayson will outgrow them eventually. He's allergic to them right now, but the test was negative because he's not PERMANENTLY. Don't ask me how a test can tell if you're permanently allergic or if you'll outgrow it lol.
ANYWAY! I say, don't serve this cake to your guests ONLY because I put breast milk in THIS cake recipe. This was Grayson's cake smash cake for his party since he couldn't have all the dairy and eggs in the one I had made for his guests. I just don't think your guests would appreciate breast milk in their cake although you can't tell a difference and what do you think a cow's milk is? Lol I won't go there because of course they do things to that milk and blah blah blah! Even if you DON'T use breast milk, I STILL don't suggest you make this for party guests. It's not gross or anything but it just has a weird texture and tastes VERY different from a regular non hypoallergenic cake.
SO here's the recipe!
Ingredients for the Cake:
- 6 ounces of breast milk (of course you can use regular milk but I of course couldn't)
- About 2-4 bananas (mashed); this was to substitute the eggs. You can also you applesauce and other things of course because the bananas make it super sticky
- A gluten free cake mix (the one cake mix I could find that didn't have dairy or eggs in it, but I do recommend you of course checking the ingredients first)
Ingredients for the Icing:
- Dairy free cream cheese (I FINALLY found some at our 14 Carrots store thank the Lord and y'all the stuff tastes just horrible if you're not used to things dairy free lol)
- Powered sugar
Directions:
All you seriously really do is follow the instructions on the cake mix, add the breast milk or regular milk, smash the bananas, and voila! Lol and for the icing, you combine the cream cheese and powdered sugar and again voila! Haha that simple!
And again y'all this cake is VERY sticky! Grayson loved the cake but did NOT like just how sticky it was. It's super, super sticky because of the bananas so if your kids hate sticky, go with applesauce instead of bananas. Grayson just LOVED bananas as the time and I was trying to give it a banana flavor since his party of course was sock monkey themed lol
